It can be almost impossible to tell from a written description the difference between a dish that’s fabulously delicious and one that’s ridiculous and awful. Here’s something I ate last summer at the restaurant Farmstead in Rhode Island: fresh lima beans with scattered bits of white chocolate, a sprinkling of chopped macadamia nuts, and tiny pieces of fresh juniper branch. It’s a combination I would expect to recoil from, yet the white chocolate’s bit of fat and sweet flattered the beans, and the resinous juniper gave a sharpness that pulled the combination back toward the umami. The dish was a success.

Taking its name from Japanese, umami is a pleasant savoury taste imparted by glutamate, a type of amino acid, and ribonucleotides, including inosinate and guanylate, which occur naturally in many foods including meat, fish, vegetables and dairy products. As the taste of umami itself is subtle and blends well with other tastes to expand and round out flavors, most people don’t recognize umami when they encounter it, but it plays an important role making food taste delicious, or the passion of the menu.
Sweetness, usually regarded as a pleasurable sensation, is produced by the presence of sugars and a few other substances. Sweetness is often connected to aldehydes and ketones, which contain a carbonyl group. Sweetness is detected by a variety of G protein coupled receptors coupled to the G protein gustducin found on the taste buds. At least two different variants of the “sweetness receptors” must be activated for the brain to register sweetness. Sweet is the pleasure aspect of your menu.
Sour is the flavor associated with he acid components of your menu and is the aspect that helps bind all the other flavors together. You must have a sour component in every dish. Use it wisely and it is you best friend!
